As was already mentioned, Burlington Coat Factory uses Linux.
I know are many companies with local Linux use.
Here are some where I know people working there using Linux:
Monta Vista: I think MV is still Linux-only and GPL-only work
Adoption.com: see Tyler's email :)
Sequoia Schools: home of the east side meetings
Adtron: home of the devel mtg ( Alan might be posting a job as well )
GCC: home of the west side meeting, most of the community colleges have FS
somewhere
Walt's TV: home of the AzPHP meetings
Choice Hotels: server side stuff
Maricopa County: server side stuff
KJZZ: local NPR station, linux and python based web site
Red 7: local computer shop ( also, 1 in 20 boxen sold has Linux on it )
SAS: local office is becoming known worldwide for Linux support
Cisco Learning Institute: only know a few people there :)
Cisco: mostly just sales and support people in town, though
Xelia Wizard Systems: Linux-based ISP and ASP
ASU: ASU is generally opposed to Free Software, but still lots of it
Places where I'm certain they're using Linux, but don't definitely know
someone doing so now:
Intel: lots of desktop and server usage reported
Motorola: not as much usage as their engineers want, but still Linux in
many places
Autozone: I think that's the right one. See the SCO lawsuit.
Uhaul: based here in town
There's a hospice services place, but I forget the name.
I know several small companies who keep low profiles that use Linux as
well.
Most of the ISPs are using Linux or *BSD, I believe.
Lots of small consultancies doing Linux work.
There were several embedded systems places in Tempe and Scottsdale using
Linux.
