personally, I back up the following directories:

/root
/etc
/boot/grub/menu.lst or /boot/grub/grub.conf
/home

also I install custom kernels so I make sure to save the .config file from
the top level of the kernel source tree (usually /usr/src/linux/.config)

then the other things to worry about are some servers which store some
of their config in /var. (named is in /var/bind/, jabberd is somewhere
in /var, mysql is somewhere in /var, if you have a custom script for
use with dhcpcd it may be in /var, there are probably some others)
If you don't run any servers you don't have to worry about /var.

also, it's good to put a list of what packages you have installed in
/root just in case you need it.

with redhat and gentoo, backing up the stuff I listed allows you to do
a clean install, then just restore the backup on top of the new install
and you're ready to go. I don't know if slackware has special places to
store other critical stuff...
