The Phoenix Valley is a huge metropolis with lots of big-city stuff to
check out, so if you haven't, I recommend checking out:

The Phoenix Art Museum
The Phoenix Science Center
Tempe Town Lake
The Phoenix Zoo
Some other zoo everyone is talking about in the far west valley that I
haven't visited yet and am too lazy to Google...
Papago Park
Arizona Capitol
The light rail route - take all of it, for fun, and end up at Super Target
Various golf courses, if you're into that
Pop the Soda Shop

Since you're from the Pacific Northwest, I'm going to assume you have
an above-average taste in coffee, in which case then, I recommend
visiting:

Cartlel Coffee Lab (Downtown Tempe)
Solo Cafe (Tempe near the Guad)
E61 Espresso Bar at Liberty Market (Downtown Gilbert)
Copper Star Coffee (Downtown Phoenix)
Press Coffee (Northeast Phoenix)
Coffee VanGo (Tucson)

Also, there's a slew of stuff that happens everywhere on weekends and
sometimes weekdays. ASU and UAT sometimes bring in geek-famous
celebrities like Steven Hawkings and Ray Kurvweil for public talks
ImprovAZ organizes medium-to-large-scale pranks every now and then,
and there's the First Friday art walk in downtown Phoenix. I
typically find stuff listed on Yelp or by trolling the Twitter public
feed for #PHX. I actually know an ASU student that has lived on free
food for a week by doing this, too. :)
