OK, I found my confusion and am now in the jabber chat!
I thought you had to go to the jabber server of your choice and register via
the web. That's not how you do it. What you do is create a new account in
GAIM of type jabber. Once I did that, all was well.
I am in two chats now, jabber and the #plugaz IRC channel.
