Create a new DNS entry called foo.xyz.com (no A record is necessary)
and set the MX records for foo to server1 and server2.
Then in the Postfix transport map, do:
xyz.com smtp:foo.xyz.com
Postfix will check the MX records and deliver according to the set priority.
