Would they be willing to tell you the BIOS password (assuming they set
one) so you can allow booting from CDROM and then disable it at the end of
each class?
CoLinux might be an option at some point in the future, but development
seems to have slowed lately:

VMWare would also be a nice addition to any lab that teaches the use of
multiple operating systems.
