Just thought I'd let everyone know that I managed to follow those
instructions and get SA, Amavis, Razor2 and Postfix running on SuSE 9.0.
While I was looking for input from folks about what they use, the
information was very useful, as I have already saved a ton of my users
from having to read about trips to the bahamas, anti-wrinkle cream and
life insurance...

Yes, you can setup a Linux box to receive incoming mail (running
SpamAssassin) and then forward it to the Exchange server. Here's a
howto
I followed a couple years ago to do exactly what you want:
