I ran into this problem. Like you I would wait an insane amount of time to
get updates. Then there would always be the updates that did not download.
Not to mention the update may still be out of date. I also wanted to learn
how to compile software and really get into learning my OS. I read a little
article in wired magazine about a site that taught you how to compile a
working Linux OS from the ground up. The project is known as Linux From
Scratch. I recomend that you check it out.
www.linuxfromscratch.org Building the OS is challenging and rewarding. There
is also a huge community behind it to help you with any problems you may
encounter.
