One thing that hasn't been mentioned is that you can, if you're REALLY motivated, setup a local SpamAssassin filter that uses the IMAP interface to GMail to filter your email.
Have SpamAssassin just transfer suspected spam into the junk folder (or delete the message, which actually sends it to the GMail trash folder, prefer junking it if possible).
That will likely take a LOT of work to get all the scripts and interfaces working, but it would provide a highly aggressive spam filtering solution under your control that should reduce the amount of spam you have to deal with manually.
Also, if you're willing to pay for a service, look into postini. They're actually part of Google now, but they still have the best commercial spam filtering solution I know of, and you can have them frontend your domain so that they filter everything before it's delivered to your *real* mail servers.
If you use Google Apps For Your Domain, then definitely upgrade to Google Apps premier (not too expensive, but it does cost some money every year); you'll get postini message security (spam/virus filtering) on every account within your Google Apps premier account. That may be the best solution for improving your particular situation.
One last note, Google Apps For Your Domain has (IIRC) a much less aggressive spam filtering solution than the consumer GMail by default. This is so that companies using the service don't get too much email blasted by the SPAM filter. Premier Edition provides much stronger filtering, but also provides a ton more control options.
