I feel your pain, I've made similar suggestions to the GMail team several times, and never got a positive result (partly because there is too much other work to do to get it to the reliability required to exit beta). There's a base philosophy behind GMail that nothing should ever be really deleted, so it's actually pretty hard to *truly* delete email.
The same thing goes for folders vs. labels, and sorting vs. searching. In the end, the GMail team build the product on a particular choice for each of those (I would prefer to see them build it with options both ways, but no luck).
I can say there's a lot of cool and very useful stuff being worked on that should improve every aspect of the product, but there's no timeline for release other than "when it's done".
Good luck with your spam battle, I can't imagine getting that much junk AFTER the GMail filters, and I hope I never come close.
