That kind of machine running dovecot should be able to handle a few
users without even waking up all the way. Something's not right
somewhere. It's hard to say where without seeing what it's doing. My
guesses would be either a misconfiguration that's causing
thrashing or delays (DNS?), or you've got some kind of bottleneck like
really slow ATA controller/disk.
Log files, top, and whatever vmstat is in Linux are your friends. Once
you figure out why it's choking you can probably fix it.
