date of 7 days ago

Quick question, been thinking about this all day today.
Whats a nice quick way to find out what the date was 7 days ago?
(one that takes into account that today could be the 3rd of January,
or April 2nd, or...)
I'm looking for a way to find the date 7 days ago so I can create a
hard-link to a directory to enable our backup software to backup my
sunday backups to tape by looking at a static link that changes every
sunday by the OS.
It's brain dead and doesn't want to do anything more than archive-bit
style backups....
