Using the LTSP- everything is on the server- model that is exactly
right. *If* you are not planning on running these all at the same time
you can get away with more memory per virtual machine. The max VMWare
will allow is 1g for all concurrently running virtual machines.

The server version is much beefier and is more designed for full
workstations (vs the terminal server workstation) with a price tag to match:

At any rate, some day I will need to 'upgrade' in order to add more
machines at which point it's probably going to involve some form of a
Windows Terminal Services box hanging next to the LTSP box. rdesktop is
rumored to work with this setup. Of course price/performance will again
have to be weighed before that step for me.
