RH8 Evolution 1.0.8 and Sent Filder

Tools Menu - Settings - Mail Accounts - Select your mail account & edit

Defaults tab - 'Sent Messages Folder:'

I think by default on Redhat, it actually automatically does that to
your local folders (Sent) as you are probably using IMAP for Exchange
Server - therefore, you can change it to a different 'folder' on the
Exchange Server. Easy as pie.
