RH8 Evolution 1.0.8 and Sent Filder

In that other system (MS Outlook) you can have the system automatically save
a copy of your outgoing email to a sent folder for documentation purposes.
Can we set up Evolution to do the same?

-or-

Is there another Linux email package that can which also works with MS
exchange server (2000 I think)?
