Yes Linux has a GHOST type of program sortof, A: GHOST will work with
Linux, B: dd is your friend C: there are several image to CDrom programs
that will backup an image to CD and reinstall same on another drive.

Can still use Peachtree different ways:
A: wine (depending on version of peachtree it may well run under wine)
B: VNC (Set up a single windows machine and use VNC from the linux
systems to run peachtree remotely. Great advantage is only a single
machine to backup)
C: CITRIX (Same as VNC but expensive.)
D: VMWARE (actually allows running Windows on the Linux machine while
Linux is running. Expensive and your still running windows).

Evolution and Open Office software suite are GPL'ed software and have no
restrictions on use. Evolution does have some plugins that are not
GPL'ed software but in a Windows free environment you will not need
them.

By avoiding use of Windows at all your friend can avoid being audited
for his "MicroSoft licenses" by the BSA which will save him a lot of
time and money. Over the long haul using Linux will save a lot of money
and time.

Also it is quite possible to setup the machine as thin clients and there
by saving you the need to build each machine.
