That is a good setup from what I hear. If you're looking for more of a
turnkey solution, I'd recommend Cloudron (https://cloudron.io). The
personal/free license allows for two app installs, one of which could be
RoundCube.

The Cloudron platform, which is almost entirely Docker-based, has an
email server built in. I don't think it uses Dovecot and Postfix, but
it's a very similar setup. Don't quote me on this, but I think it uses
Haraka (smtp) and Dovecot (imap).
