The keyword is "noauto". Kind of like so:
LABEL=my_label /mnt/somewhere ext4 noauto 0 0
Using label instead of UUID makes the fstab easier to read. Note that
the fsck/dump fields must also be 0 for filesystems that are not
guaranteed to be present at boot time.
