I wouldn't think you would have any problems with the latest stable, but I
can't imagine why you would want to deviate. I've done LFS a few times and
in my experience it's best to take the minimal (straight LFS and don't even
look at BLFS) approach the first time through. While building a
working/bootable system isn't too tough following the directions deviating
from those instructions can do surprising things.
tl;dr - If you don't already understand what all the pieces of the system
do, stick to the book for the first attempt.
