It really depends on what you are looking for, feature-wise. I know of
one very simple wiki, TiddlyWiki, that is just a Javascript driven
single html file wiki. All the pages and links you are creating are
called Tiddlers and works like other Wikis, except it isn't meant for
lots of users editing and maintaining it. But makes for a great way to
create a journal or cross-linked log of stuff.

MediaWiki (which is used to drive Wikipedia) isn't hard to setup at all,
but is extremely powerful and has tons of options for how to set stuff
up. Or you could go with an already built wiki system, like Wikia, where
you sign up for a subdomain and just use the software they install.
