We were fond of trixbox for the server along with GrandStream phones.

Yep :) Lack of any real constraints is what Open Source is all about :)
Freeswitch I believe will eventually overtake Asterisk as the Open Source
telephony engine. When FreePBX fully supports it I'll give it a serious
try.
