Anaconda was re-written for F11 and there are some rough edges in the
installer for F11 that weren't quite all smoothed out when it was
finalized and shipped.

That said though, you can boot the installation disc in Fedora and at
any time, press <Control><Alt><F2> and get the alternate text based
console
<Alt><F3> I believe is standard error
<Alt><F4> I believe is standard out
maybe vice versa, I never remember
<Alt><F1> should get you back to the installer

This means that you can get console and run fdisk during the installer
so if you don't like the options given to you by Anaconda, you can
<Control><Alt><F2>
fdisk /dev/sda
- create your partitions -
<Control><Alt><F1>
- continue the installation using the partitions created in fdisk
