Postfix is what I run. Its relatively easy to set up for basic stuff. Its
also very very flexible so you can do more complex stuff.
I'd also look at Exim if your expected setup is pretty simple
Avoid sendmail like the plague.
I've dealt with qmail in the past... its weird. It works well, but not
exactly an easy setup.
