This might be a security faux-pas in some eyes, but isn't NFS designed to
mount remote directories across a couple of Linux boxen?

You can do this an easier way.
Use ssh to login to the remote box. I believe the default config will allow
for X forwarding.
Once you are logged in to the remote box, you can run a graphical program
like
Easytag to do your tag editing.
I use this technique to mass-tweak tags on my music server.
