I would recommend a postfix/cyrus setup. Cyrus gives you a POP server as well
as an IMAP server (of course you can disable the imap if desired). I use the
two with saslauth and phpgroupware for a complete mail solution. I run on
SuSE so I am not sure of any "minor details" that may slow down your
implementation on Debian but there is a ton of documentation on the net for a
postfix/cyrus install.
