Debian: Protect files from apt overwriting them?

Subject: Debian: Protect files from apt overwriting them?
when I to an apt-upgrade, it overwrites /usr/bin/sendmail if an update
has occured to some package, exim I think. In my situation
/usr/bin/sendmail is actually just a symlink to qmail's sendmail wrapper
therefore I want to tell apt to never overwrite this file, can this be
done?
