fdisk and cfdisk will let you specify the partition type, which would
typically be either Linux (type 83) or Linux swap (82). This has
nothing to do with what filesystem you put on it.

How you do that depends on how you're doing this. It varies depending
on the installer if you're doing it during an install, or see mkfs(8) if
you're doing this from an already-set-up system.
