This kernel panicking problem (if I recall correctly) only happened one
or two (identical) of my customer's servers.
Since then, we started using rsync (on same box to other hard disks) to
backup data. (We had to make partitions and mkfs first.)
I don't recall ever finding out what the problem was. (It was around 18
months ago with old kernel and possibly bad hardware.)
Sorry, I don't have a fix, but I was just answering that I have had
similar problem with dd and kernel panicks.
