I start it from the command line:
>$ gaim&


I click the "Options" button in the "Login" window.
Now The "Preferences" window is open. Mine has a window on the left side
with what I'll call a "preferences tree". The 5 Choices there are
General, Buddy List, Conversations, Sounds, & Away Messages. Under
Conversations there's "Font Options". The last thing in the "Font
Options" window is a checkbox with "Font Size for Text" and a scroll box
to change the setting. 3 is the default (I guess) but it'll go as high
as 7.

I don't know if it matters or not, but my version is the one that
shipped w/ RH8.0.
