changed your /etc/apt/sources.list to point to sid, apt-get update,
apt-get install evolution gnucash, then switch your
/etc/apt/sources.list back to testing.
I use to use this to track a few packages from sid and still run
testing. eventually I just updated to sid completely and the debian
team made the pinning ability. so you can try to figure out the pinning
stuff as well.
