For a new gentoo user with a slow machine I would recommend starting on stage 3. You'll get up and running a lot faster since you don't have to compile gcc, glibc, etc. You'll still compile the apps you will be using and your kernel, so those will still be optimized for your system. Once you are up and running, you can always go back and emerge -u system and world to get an uber-optimized system.
