In mozilla just use the IP address of your mail server box or its' full name.

Configure your mail server. Make it hand off mail to your ISPs mail server for
delivery.

If you want to deliver your mail directly without the use of your ISP then it
gets more complicated. Make any DNS settings that are needed so other mail
servers can find yours and send your mail to you. This might mean you buy a
domain name and setup a DNS server on one or more static IPs. You should make
sure your IP reverse resolves correctly so people will accept mail from you.
This would require the assistance of the party renting you the IP address(es).

In mozilla just use the IP address of your mail server box or its' full name.

You may need to run an imap or pop daemon so mozilla can pull mail from your
server.
