Only if you need something out of testing. stable is more than adequate
for most. My mail server and backup server were both potato until woody
was released. I had grabbed apt out of woody and newer versions of the cd
burning programs I use, but was otherwise, I think, running a stock potato.

Also, debian is addressing the staleness issue. Potato had some
functionality improvements in the sub-releases rather than just security and
data loss prevention updates as has been tradition. There is also work being
done to provide snapshots of testing that would be equivalent of the point
releases by other dists.
