Use good ol' dd of course!
dd if=/dev/cdrom of=isoimage.iso
and you are done.

Is there a simple way to create ISO images of a CD within Linux? I was
looking at the man page for mkisofs and this appears to be the command to
use. Does anyone have any experience putting together an effective string
of command line options that can build a Linux ISO image? Can anyone
recommend a software package that does this?
