Yup, editing sources.list is safe. Depending on what you put in it ;-).

If you just comment out unstable and leave in testing, then do an update
future installs will come from testing.

If you want to get rid of the packages from unstable and replace them with
packages from testing wait a few days and I'll have finished experimenting
with that :).
