One possibility, kinda bleh, would be to replace
"inetd" with "xinetd", then run sendmail from
xinetd instead of as a standalone daemon. xinetd
permits you to bind specific services to specific
IP addresses.

Else, "Use the Source, Luke!" and hack up sendmail
to bind to a specific IP address.
