I use Asunder for this.
It not only copies over (creates) the wav format for each track, but it can "simultaneously" encode as MP3, OGG Vorbis, and FLAC in a single process so I have multiple compressed options and 2 lossless copies (wav as original PCM and FLAC with metadata) in case I ever want to re-encode.
It reads the disc data from freedb.org and inserts the artist/album/track data into each file created (for formats that have metadata support) as well as naming the files (per preferences) in folders and filenames based on the disc information.  In the case of discs without data in freeDB (occasionally this will happen) it allows you to enter the data yourself before pulling the data and creating the files.
It takes a bit longer to rip because of the multiple encodes, (and I use about 800-1200 MB for each disc because of the extra lossless files), but it's worth it to me to have all the formats I prefer done in a single pass.

sudo apt-get install asunder on Ubuntu and other Debian systems
sudo yum install asunder on Fedora and other RPM systems.
