I think Phil over at MCC is working with student groups on this type of
thing.

I noticed at an InstallFest that UAT has a capture the flag student group.
I believe they also have some other security-minded student groups.

There are others in Phoenix who are regulars for Defcon.

Learn how to setup firewalls. Know what they're doing under the hood. Test
them to make sure they're doing what you think they're doing.

Get involved with a hardening project for GNU/Linux or *BSD.

Giving the new guy a chance in security can be dangerous :). You need to
show you've got some basic knowledge and the initiative to learn stuff on
your own.

I'm not saying you don't, just pointing out that you need to be able to
demonstrate it.
