Setting up php-fpm _should_ be easy and the defaults should work for most people; I only skimmed the other thread but it looks like you ran into what a lot of people run into, except that since it's more than one program running you can't just "chmod 777" your way out of it.

Nginx is running as one user, typically either "nginx" or "www-data", while php-fpm will run as a different user, such as "php" or "php-fpm".

The files must at least be executable by the php-fpm process, thus they should typically be owned by whatever user php-fpm is running as. Similarly, nginx needs to be able to talk to the socket that php-fpm creates, which is by default the same user it's running as but that can be changed. So, either nginx and php-fpm need to be running as the same user (not very secure) or you need to change the configuration of php-fpm to create the socket as the user nginx is running as.

Once you do that, assuming you've also wired up nginx correctly, everything should just work.

I hope that in the process of getting everything working you learned and understood why you were making the changes you were making rather than just throwing things at the wall and see what sticks.
