Forget darktable for now.  Did you run stress test for more than 10 seconds?

This will run a stress test for 30 minutes:

stress --cpu 8 --io 4 --vm 2  --hdd 2 --timeout 1800s

If you can get it to crash with just this stress program, then it has
nothing to do with darktable
