How to use clonezilla to copy just one partition?

No, it won't.
But you'll have to 'grub-install' anyway if you are going to dual-boot.
I'm sure you'll have to dink around with GRUB after the (cumbersome in my 
opinion) 'Clonezilla' anyway.
