libre office writer question

Sometimes when I try to open a text file with libre office writer the
system asks me which character set to use, and the dropdown box lists a
bunch of foreign countries and languages, none of which seem to be
appropriate. How can I determine which one to select?  And, is there some
way to eliminate the long list of options that would never be applicable?
