mplayer -dumpaudio

You'll need to read (or at least skim) the man page to get all the details, perhaps:

mplayer dvd://1 -dumpaudio -chapter 1 -endchapter 2

Suggestion: Use mplayer w/o the -dumpaudio switch to watch the video and find the
part you want first.
