I've been using Apple's Mail.app for a few years now, but I used to  
use Thunderbird and liked it.  Isn't there a menu in the Preferences  
somewhere called 'Helper Applications'?  I think you can use that to  
tell Thunderbird to open Sunbird whenever you click on an attached  
.ics file.
