Patrick's suggestions got me thinking... what I ended up doing to fix the
problem was, I added:
title = Windows
root = (hd0,0)
makeactive
chainloader +1
to the /boot/grub/menu.lst.
My windows installation is still there and boots up fine.
My apologies for bothering the list with this newbie goof-up :)

Hi - I have found out some more info...
This is what the 'mount' command shows:
/dev/hdb2 on / type ext3 (rw)
none on /proc type proc (rw)
usbdevfs on /proc/bus/usb/type usbdevfs (rw)
/dev/hdb1 on /boot type ext3 (rw)
none on /dev/pts type devpts (rw, gid=5,mode=620)
none on /dev/shm type tmpfs (rw)
none on /proc/sys/fs/binfmt_misc type binfmt_misc (rw)
Drive 1 - is still NTFS, and Windows XP is still on it, in some form. I just
can't get it to load. If I go into Windows recovery console, I can view all
the files etc on the drive.
Drive 2 - RedHat 7.2. When I book up, it loads GRUB. The only option is Red
Hat.
So from what I can tell, windows is still intact, but the boot program on
Drive 1 is telling Linux on Drive 2 to load and not give an option to load
windows. I have disconnected Drive 2 and all the happens is it says "GRUB"
and that is all.
Any suggestions would be greatly appreciated!!

Ok,
First, I would boot into the Linux system. Run 'mount' to see which
partitions are being mounted. If Windows was on disk one then that would
be /dev/hda and the second disk would be (depending upon how many
ide drives total there, including cdrom, cd burner, LS120 drive, Zip
drive, etc.) /dev/hdb, /dev/hdc, or /dev/hdd. If the partitions that are
mounted are all on hda, then you are probably hosed... however if not then
you may be able to configure the boot program to look for the other
operating system. It would be helpful to know the operating system and
version in order to help further- also which boot loader is being used.
