I believe vnc is named vino on mint. You use it to connect to the desktop like teamviewer. Then you can set things up on the nuc. You could also just connect a keyboard mouse and monitor.

You want to set up your nuc to share the drive on the network. Then mount the share on the other machine. Google setting up NFS on mint
