I waited a long time before going to CentOs 7 from 6 and by then there was lots of information available. Since CentOs 8 is fairly new there's a lot still needed.

I for one am hoping that mate desktop gets ported, I really don't like gnome 3

Given a little time I think you'll start seeing more documentation on things.
