- turned off secure boot
- turned on legacy boot
- changed boot order to make USB device 1st
- wiped entire drive

- installed as normal

At least on my laptop, the GPT was undersized to meet Microsoft's minimal specifications, causing issues if you tried to put other OSes on it.

I followed the technical spec, which if I remember right was 512mb.  Also, once it is set up correctly, you will not need a /boot partition, you can use that GPT partition mounted on /boot.
