I use the a Unicomp (specifically http://pckeyboard.com/page/UKBD/UNIZPHA) at work and a Das Keyboard at home.  I personally really prefer the Unicomp, it's got noticeably more "click" to it but is also quite a bit louder than my Das.  It's really just personal preference, but the Unicomp keyboards are every bit as satisfying as you might hope.

FWIW, using xbindkeys can make a key or key combination of your choosing set the mixer volume +5% or -5% .  Or mute.  Or anything you can do with a shell command.  Using xbindkeys in combination with xmacroplay can make it so that pushing Shift-F2 will send X key events for "foobar" to the currently active window, for example.
