Easily done... just do Insert -> Fields -> Date
The date will show up in gray to let you know that it is a variable that can change.  If you want to adjust the format of the date, just double click on it.

I'm making a template with libreoffice. Is there a way to get it to
automatically insert the current date after retrieving the template
form? It is easy enough to do each time but I was wondering if it could
be done auto matically.
